During the early 20th century, Straus acquired hundreds of acres in Middletown for his country retreat. His estate was designed by the esteemed architect Alfred Hopkins, who was well known for designing residences for the Vanderbilts, Tiffanys and other important industrialists of the 19th century. Later Mr Straus, a friend of Louis Pasteur, acquired one of Pasteur's patents and was the first to bring the process of milk "Pasteurization" to the US which he developed at this property. Mr Staus transported his pasteurized milk to the city with horse drawn carriages from these stables to distribute to parents. This innovation was solely responsible for significantly lowering high childhood mortality at that time. Sadly, Mr Straus perished on the Titanic, but the stables remain and carry forth his rich history and legacy.
